Objectives

  1. a) To determine antioxidant properties of soluble and bound phenolic compounds of different cultivars of whole grain millets, namely foxtail, proso, and finger millets grown in different locations in Sri Lanka. b) To identify and quantify the phenolic compounds and their antioxidant activities present in the soluble and bound phenolic fractions of millet food preparations which prepared using different cooking methods such as dry roasting, steaming, pressure cooking , open boiling and baking. c) To determine the bioaccessibility of millet phenolics using a dynamic in vitro digestion model and microbial fermentation. d) To determine the bioavailability and bioactivities such as antioxidant activity, postprandial blood glucose level lowering effect, cholesterol lowering effect of millet phenolics in healthy human individuals
